Golden Corn Hot Dip

Whether it's a casual catch-up with friends or a family gathering, this Golden Corn Hot Dip is always
a favourite. Creamy, cheesy and baked until golden, it's the perfect dip to share with crunchy tortilla
chips, toasted bread or fresh vegetable sticks.

Ingredients
1 fresh corn cob, kernels removed (or 420 g can corn, drained)
25 g butter
1 garlic clove, crushed
½ small red capsicum, finely diced
½ tsp smoked paprika
¼ tsp chilli powder
250 g cream cheese
125 ml sour cream
2 tbsp corn relish
2 tbsp chopped fresh chives
120 g grated tasty cheese, divided
Salt and pepper
Method
1. Prepare the corn mixture
Preheat the oven to 190°C. Sauté the corn, butter, garlic, capsicum, smoked paprika and chilli powder for 4–5 minutes.
2. Reserve some corn for garnish
Remove and reserve 2 tablespoons of the cooked corn mixture for garnish.
3. Add the creamy ingredients
Stir the cream cheese, sour cream, corn relish, chives and 90 g of the grated cheese into the remaining corn mixture until smooth and combined. Season with salt and pepper.
4. Bake
Spoon the mixture into an ovenproof dish and top with the remaining grated cheese. Bake for 20–30 minutes, or until golden and bubbling.
5. Garnish and serve
Garnish with the reserved corn, capsicum, chives and a little smoked paprika. Serve warm.
