Gluten Free Glazed Orange & Almond Cake

Ingredients
Cake
180 g almond meal
70 g desiccated coconut
270 g caster sugar
3 g sea salt flakes (½ tsp)
Finely grated zest of 1 orange
2 tsp freshly squeezed orange juice
4 eggs
1 tsp vanilla extract
200 g butter, melted
30 g flaked almonds
Orange Glaze
65 g icing sugar
2–3 tbsp freshly squeezed orange juice
Method
1. Prepare the tin
Preheat the oven to 180°C conventional (160°C fan-forced). Grease and line a 20 cm round cake tin with baking paper.
2. Combine the dry ingredients
Place the almond meal, coconut, caster sugar and salt into a large mixing bowl and stir to combine.
3. Add the wet ingredients
Add the orange zest, freshly squeezed orange juice, eggs, vanilla and melted butter. Beat until smooth and well combined.
4. Prepare for baking
Spoon the mixture into the prepared tin and smooth the surface. Scatter the flaked almonds evenly over the top.
5. Bake
Loosely cover the cake with foil and bake for 30 minutes. Remove the foil and continue baking for a further 20–25 minutes, or until a skewer inserted into the centre comes out clean.
6. Cool the cake
Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
7. Make the orange glaze
Whisk the icing sugar with enough freshly squeezed orange juice to make a thick, naturally white, pourable glaze. The glaze should be thick enough to sit on the cake rather than run down the sides.
8. Finish and serve
Drizzle the glaze over the cooled cake in a relaxed, rustic pattern. Allow the glaze to set slightly before slicing.

The flavour develops beautifully overnight, making this a lovely cake to prepare ahead. The thick white orange glaze is intentionally simple and rustic rather than perfectly smooth. Serve with softly whipped cream, Greek yoghurt or fresh berries. Works well to make ahead and freeze.
