Fudgy Gluten-Free Chocolate Chunk Brownies

Ingredients
180 g unsalted butter
240 g dark chocolate, roughly chopped, for melting
250 g brown sugar
3 large eggs
1 tsp vanilla extract
100 g gluten-free plain flour
30 g cocoa powder
100 g sour cream
120 g chocolate chips or chocolate chunks
½ tsp sea salt
To serve
Icing sugar, for dusting
Fresh cream, lightly whipped
Fresh strawberries
Method
1. Prepare the tin
Preheat the oven to 170°C fan-forced (180°C conventional). Grease and line a 20 × 20 cm square baking tin with baking paper.
2. Melt the chocolate
Place the butter and 240 g dark chocolate in a heatproof bowl. Melt gently in the microwave in 30-second bursts, stirring between each, or over a saucepan of barely simmering water. Stir until completely smooth and set aside for about 5 minutes to cool slightly.
3. Build the brownie mixture
Add the brown sugar to the warm chocolate mixture and whisk until well combined. Add the eggs one at a time, whisking well after each addition. Add the vanilla and whisk until smooth and glossy.
4. Add the dry ingredients
Sift the gluten-free flour and cocoa powder into the chocolate mixture. Add the sea salt and fold gently until just combined.
5. Add the sour cream and chocolate chunks
Fold through the sour cream until no streaks remain. Fold through the chocolate chips or chocolate chunks, taking care not to overmix.
6. Bake
Pour the mixture into the prepared tin and smooth the surface. Bake for 25–30 minutes, or until the edges are set and the centre has a very slight wobble. A skewer inserted into the centre should come out with moist crumbs attached.
7. Cool and slice
Allow the brownies to cool completely in the tin. For the neatest slices, refrigerate for about 30 minutes before cutting.
8. Serve
Dust lightly with icing sugar just before serving. Serve with softly whipped cream and fresh strawberries.

These are best when they're still wonderfully fudgy in the centre, so resist the temptation to keep baking them until the skewer comes out completely clean. For the best texture, let them cool completely before slicing. They can also be made a day ahead— the chocolate flavour becomes even richer overnight
